The recipe for tomatoes with fruit without vinegar for the winter

Ordinary apples can become a full substitute for table vinegar. Culinary experts recommend using acidic apple varieties for this preservation; insufficiently ripe fruits can also be used.

For such a fruit and vegetable assortment, you should prepare:

  • apples from the calculation of 2 pieces for each three-liter jar;
  • cherry leaf;
  • bitter pepper;
  • a little allspice;
  • dill, parsley;
  • 30 g of salt;
  • Bay leaf.

To prepare salting follow the sequence of actions:

  1. Glass containers are prepared: washed, sterilized.
  2. Spices are placed at the bottom of each jar.
  3. Washed apples are cut into 4 parts, removing the core, put the prepared fruit on the bottom of the jar.
  4. Dense tomatoes are placed on top, covered with a sprig of parsley, chopped bitter pepper (1/3 in each jar) is added
  5. Pour boiling water, leave for several minutes, covered with lids.
  6. After cooling, the water is drained, again brought to a boil, tomatoes are poured.
  7. Before pouring boiling water over the tomatoes for the third time, 3 tablespoons of salt and sugar are added to each container.
  8. Roll up, tightly wrap with a warm cloth until completely cooled.

Tomatoes without vinegar: recipe with berries

No less tasty and useful is the preservation of tomatoes for the winter without vinegar and sterilization, but with the addition of berries. Culinary experts recommend the use of black or red currants, blackberries. The problem is that blackcurrant ripens much earlier than the tomatoes reach the required degree of maturity, so you can use frozen berries.

For such canned tomatoes should be prepared:

  • berries of currant or blackberry;
  • bell pepper;
  • a bunch of parsley;
  • Bay leaf;
  • dense tomatoes;
  • salt;
  • sugar;
  • allspice.

Step-by-step prescription:

  1. Tomatoes are thoroughly washed, sorted, and spoiled vegetables are separated.
  2. In clean and sterilized jars, put on the bottom of the Bulgarian pepper at the rate of one piece per three-liter jar. Grains are preliminarily removed, and each pepper is cut into 4 parts.
  3. Tomatoes are stacked to the top of the jar, leaving little room for a small bunch of parsley.
  4. A handful of berries is poured into each container, shaking the jar a little to evenly distribute the berries between the tomatoes.
  5. Cover the tomatoes with parsley, pour boiling water, leave for several minutes.
  6. Drain the liquid, bring to a boil, pour the tomatoes again.
  7. Before the last pouring, 50 g of salt and sugar, bay leaf and several peas of allspice are introduced into each jar.
  8. Pour boiling water, roll up cans, turn over, leave to cool.

Such conservation is cooled at a natural temperature during the day.

Salty conservation of tomatoes without vinegar

Fans of salted tomatoes without a sweet aftertaste and pungency will like the recipe, according to which tomatoes are preserved only with the addition of salt and using sterilization. To taste, they resemble ordinary tomato juice, and their benefits are no less.

For this winter snack you should prepare:

  • Tomatoes

Conservation sequence:

  7. After a time, the cans are corked, flipped, left to cool.

Sweet and sour tomatoes: recipe without vinegar

This recipe is not much different from the traditional aromatic method of pickling, except that the tomatoes are cooked without the addition of vinegar.

  5. At the last boil, salt and sugar are added, half a teaspoon of citric acid is placed in each jar.
  6. Pour boiling brine, roll up cans, turn over and cool.

Such tomatoes can be served at the table a month and a half after canning, as it is necessary to give them a period so that they are marinated.

Canned tomatoes without vinegar in a honey-lemon marinade

Fragrant and especially piquant tomatoes are obtained in a honey-lemon marinade. Such tomatoes are prepared without the addition of vinegar, since lemon is the preservative in this recipe.

For this piquant dish you should prepare the components:

  • 1½ kg of small tomatoes;
  • 100 g of honey;
  • a couple of large lemons;
  • cilantro, celery;
  • 4 cloves of garlic;
  • chilli;
  • salt;
  • vegetable oil.

Preservation Method:

  1. Tomatoes are thoroughly washed, blanched in boiling water for a minute, peeled.
  2. At the bottom of prepared liter cans lay greens, a slice of chili pepper, garlic.
  3. Tomatoes are laid to the top, poured with boiling water, left for several minutes.
  4. Squeeze juice from lemons, add salt, honey.
  5. Pour water from jars into a container with a honey-lemon mixture, mix the brine, bring to a boil and pour the tomatoes in jars.
  6. Roll up, turn over and wrap up to cool.

This recipe is simple to prepare, and is also completely harmless to older people and children. It is not recommended to preserve such tomatoes only for those who have a history of allergies to bee products or citrus fruits.

These tomatoes can also be prepared according to an accelerated recipe. To do this, greens, garlic and spices are passed through a meat grinder, salt, lemon juice and honey are added. Prepared tomatoes are poured with such a marinade and left for 12 hours in the refrigerator. Then they are transferred to clean jars, closed with lids and left in a cool place for storage.

The easiest recipe for canning tomatoes for the winter without sterilization and vinegar

Tomatoes cooked according to this recipe are amazing. They have an excellent, slightly islandy, but delicate taste. But the main feature of this recipe is that among the components there is no vinegar, which is strictly forbidden to people who have housing and communal diseases, and is also not recommended for children.

It will be required:

  • 2 kg of dense tomatoes;
  • 100 gr. dill;
  • 10 garlic cloves;
  • 5 gr. black pepper;
  • 3 bay leaves;
  • 50 gr salts;
  • 80 gr. Sahara;
  • 2.5 liters of purified water.

Stages of cooking:

  1. Water is mixed with sugar, salt, pepper and bay leaf and boiled.
  2. After heating, the marinade should boil for another ten minutes, after which it is set aside until it reaches room temperature.
  3. Tomatoes need to be washed, after which each instance is pierced with a fork.
  4. Prepared tomatoes are laid out in high-quality washed jars.
  5. On top of the jars is placed peeled and chopped garlic in the form of thin plates.
  6. Dill is soaked in water and then chopped as finely as possible.
  7. Now the cooled marinade is poured into the cans, and they are closed with screw caps.

Banks are stored in the refrigerator or in the cellar, but the first sample can be removed after three days.
