Blackberry is a tasty and healthy berry, in its characteristics it is very similar to raspberries known to all. It has been used for many years in folk medicine. Jam made from this berry helps with colds, stewed fruit normalize the intestines.

Blackberry Compote Preservation

Children like this compote very much. Its slightly sour taste does not bother at all. And it’s difficult to even count its useful properties.

You will need:

  • purified water - 2 l;
  • fresh blackberry - 1 kg;
  • sugar - 3 kg.

Stages of cooking:

  1. First of all, it is necessary to sort out all the berries, remove the spoiled, damaged ones.
  2. The blackberry is thoroughly washed and dried.
  3. Prepared berries are laid out in previously washed with soda and sterilized jars. Each jar should be approximately half full.
  4. At the next stage, syrup is prepared. To do this, put the water on the fire and bring to a boil.
  5. Sugar is poured into the boiling liquid and thoroughly mixed.
  6. To prepare the syrup, it is enough to boil the resulting liquid for only five minutes.
  7. The berries laid in jars are poured with freshly prepared syrup and undergo repeated sterilization, which lasts 10 minutes.

Ready compote roll up and do not touch until it cools completely.

Preserving blackberry jelly for the winter

Blackberry jelly can be safely called one of the best harvesting options for the winter. In addition to the incredible taste, this jelly is also good because it can be used to cook pies and cookies, which are so nice to eat on the coldest days and drink hot tea.

You will need:

  • 5 glasses of blackberry juice;
  • 3 cups of sugar.

Stages of cooking:

  1. Ripe blackberries are first picked and washed, then dried.
  2. The berry prepared for further actions is placed in a deep container, preferably enameled, placed in a warm enough place so that it releases the necessary amount of juice.
  3. After 12 hours, the entire contents of the container is laid out on cheesecloth and suspended above the pan so that all the liquid in it is glass. Juice must drain on its own, in no case should the mass be squeezed out, do not rush things.
  4. In the juice that eventually turned out, all the necessary sugar is added and it is placed on the stove. It is brought to a boil and boiled for no more than five minutes.
  5. The finished product is hot poured into pre-washed with soda and sterilized cans.
  6. It only remains to roll up and let the banks cool. There is no need to wrap them up or even turn them over.

The mass, which remained unused in the process of harvesting, can serve as the main ingredient for the preparation of marmalade or jam.

Tasty jam "On health"

This jam will be an excellent helper in the fight against colds, which is almost inevitable in winter. Children will be happy to eat it, even at very high temperatures. And here it is a miracle - the temperature will begin to drop, because blackberries along with raspberries are an excellent diaphoretic.

You will need:

  • berries of ripe blackberry - 1 kg;
  • sugar - 6 glasses.

Stages of cooking:

  1. All berries are picked and washed. In order not to damage them, it is best to use a shower.
  2. The berries are laid out in a deep container and sprinkled with half the prepared sugar, after which they are placed in a fairly cool place for a quarter of a day.
  3. After time, the berries are separated from the juice, which was formed during the infusion.
  4. Sugar is poured into the resulting juice, which remains, the mixture is put on fire.
  5. The liquid is brought to a boiling state and continues to boil until all the sugar has completely dissolved.
  6. The resulting syrup cools down a bit (literally 10 degrees) and pours into a container with berries.
  7. On a very low fire, the berries heat up and languish for a quarter of an hour until they are boiled to the desired consistency.
  8. Ready jam is laid out in advance washed with soda and sterilized banks, rolled up. Additional sterilization is not required.

If larvae are found in the berries, this is not a problem at all. They are easy to handle. To do this, it is necessary to pour the affected blackberry with salt water (in a liter of water, dilute a couple of tablespoons of salt and stir). After a quarter of an hour, the larvae will float up and they can be removed. The berries themselves after this procedure must be thoroughly washed and dried.

Blackberry pastille

It is very easy to prepare such a treat, and thanks to the possibility of storage in banks, you can save it for a long time.

You will need:

  • blackberries - 1 kg;
  • sugar - 2 and a half cups.

Stages of cooking:

  1. Berries are picked and washed. They should be dried a little.
  2. Mashed potatoes are made from prepared berries - a homogeneous mass, which will serve as the main component of the future marshmallow.
  3. Cooked puree is poured into a deep, preferably enameled container and put on low heat.
  4. Sugar is added in small portions to the berry mass.
  5. The resulting mixture is simmered on fire until its volume is reduced by half.
  6. When the mixture has acquired the density characteristic of jelly, it is poured into a mold and placed in the oven.
  7. In the oven, pastille is cooked at a minimum temperature of about 10 hours.
  8. The finished pastille is cut into pieces and sprinkled with powdered sugar if desired.
  9. So that the product does not dry out, it is placed in dry, clean jars and corked.

Blackberry jam

You will need:

  • blackberry - 1 kg;
  • sugar - 5 glasses;
  • purified water - 2 glasses.

Stages of cooking:

  1. Berries are cleared of the stalks, picked and washed.
  2. Half the prepared berries are immersed in hot but not boiling water for several minutes.
  3. The water is drained, and the blackberry is immediately rubbed with a sieve.
  4. The resulting mass is put on fire, water is poured into it.
  5. 5 minutes after boiling the berry mass, the remaining berries and all sugar are added to it.
  6. The mass is boiled with constant stirring until completely cooked.
  7. Cooked jam is poured into pre-washed with soda and sterilized cans.
  8. Banks roll up and cool.

To make the consistency of jam more dense, in the process of adding the remaining blackberry, you can add apples, previously sliced ​​in the form of slices.

Blackberry jam without heat treatment
